Balsamic Fig Pork Medallions

with Goat Cheese Green Bean Almondine

Overview

A rich, savory-sweet dish that brings together tender pork medallions, crisp green beans, and a luxurious balsamic fig glaze. Finished with creamy goat cheese and almonds, this recipe delivers a restaurant-quality experience at home.

Ingredients

  • Pork medallions
  • Fresh green beans
  • Goat cheese
  • Sliced almonds
  • Salt and pepper
  • Fig preserves

Before You Cook

  • Preheat oven to 425°F
  • Wash and dry all produce
  • Allow pork to come to room temperature for even cooking

Step 1: Prepare the Green Beans

Trim green beans if needed.

In a microwave-safe bowl, combine green beans with 2 Tbsp water. Cover and microwave until just tender, about 4–6 minutes. Drain.

Transfer to a baking tray and toss with:

  • 2 tsp Seven Barrels Tuscan Herb Olive Oil
  • A pinch of garlic, salt, and pepper

Set aside.

Step 2: Roast the Pork Medallions

Pat pork dry and season with salt and pepper.

Place on a lined baking tray and lightly drizzle with Seven Barrels Tuscan Herb Olive Oil.

Bake at 425°F for 14–16 minutes, or until internal temperature reaches 145°F.

Let rest for 3 minutes before serving.

Step 3: Create the Balsamic Fig Glaze

In a small bowl, combine:

  • 2 Tbsp Seven Barrels Traditional Balsamic Vinegar
  • Fig preserves

Microwave for 30–60 seconds until warmed through.

Stir in:

  • 1/2 Tbsp butter (optional for richness)
  • A pinch of salt

Step 4: Finish & Serve

Plate pork medallions alongside green beans.

Spoon the warm balsamic fig glaze over the pork.

Finish with:

  • Crumbled goat cheese
  • A sprinkle of sliced almonds
  • Optional light drizzle of Traditional Balsamic for added depth

Serve immediately.
