Balsamic Fig Pork Medallions
with Goat Cheese Green Bean Almondine

Ingredients
- Pork medallions
- Fresh green beans
- Goat cheese
- Sliced almonds
- Salt and pepper
- Fig preserves

Before You Cook
- Preheat oven to 425°F
- Wash and dry all produce
- Allow pork to come to room temperature for even cooking
Step 1: Prepare the Green Beans
Trim green beans if needed.
In a microwave-safe bowl, combine green beans with 2 Tbsp water. Cover and microwave until just tender, about 4–6 minutes. Drain.
Transfer to a baking tray and toss with:
- 2 tsp Seven Barrels Tuscan Herb Olive Oil
- A pinch of garlic, salt, and pepper
Set aside.
Step 2: Roast the Pork Medallions
Pat pork dry and season with salt and pepper.
Place on a lined baking tray and lightly drizzle with Seven Barrels Tuscan Herb Olive Oil.
Bake at 425°F for 14–16 minutes, or until internal temperature reaches 145°F.
Let rest for 3 minutes before serving.
Step 3: Create the Balsamic Fig Glaze
In a small bowl, combine:
- 2 Tbsp Seven Barrels Traditional Balsamic Vinegar
- Fig preserves
Microwave for 30–60 seconds until warmed through.
Stir in:
- 1/2 Tbsp butter (optional for richness)
- A pinch of salt
Step 4: Finish & Serve
Plate pork medallions alongside green beans.
Spoon the warm balsamic fig glaze over the pork.
Finish with:
- Crumbled goat cheese
- A sprinkle of sliced almonds
- Optional light drizzle of Traditional Balsamic for added depth
Serve immediately.
