Blueberry Balsamic Buttermilk Pancakes

Fluffy buttermilk pancakes made with Seven Barrels Blueberry Balsamic Vinegar and Meyer Lemon Extra Virgin Olive Oil, loaded with fresh blueberries and finished with a warm Blueberry Maple Drizzle.

Ingredients

For the Pancakes

  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon kosher salt
  • 2 large eggs
  • 1¾ cups buttermilk
  • 2 tablespoons Seven Barrels Meyer Lemon Extra Virgin Olive Oil
  • 1 tablespoon Seven Barrels Blueberry Balsamic Vinegar
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon zest
  • 1½ cups fresh blueberries

Blueberry Maple Drizzle

  • ½ cup pure maple syrup
  • 2 tablespoons Seven Barrels Blueberry Balsamic Vinegar
  • ½ cup fresh blueberries
  • 1 tablespoon butter

For Serving

Fresh blueberries

Butter

Lemon zest

Powdered sugar (optional)

Extra Blueberry Balsamic for finishing

Instructions

1. Prepare the Batter

Whisk together:

  • Flour
  • Sugar
  • Baking powder
  • Baking soda
  • Salt

In another bowl whisk:

  • Eggs
  • Buttermilk
  • Meyer Lemon Olive Oil
  • Blueberry Balsamic
  • Vanilla
  • Lemon zest

Combine wet and dry ingredients until just mixed.

Fold in the blueberries.

Let the batter rest for five minutes.

2. Prepare the Drizzle

In a small saucepan combine:

  • Maple syrup
  • Blueberry Balsamic
  • Butter
  • Fresh blueberries

Simmer 5 minutes.

Lightly mash a few berries.

Keep warm.

3. Cook

Heat a lightly buttered griddle over medium heat.

Pour ¼ cup batter for each pancake.

Cook until bubbles appear.

Flip and cook until golden brown.

4. Serve

Stack the pancakes.

Top with butter.

Spoon over the warm Blueberry Maple Drizzle.

Finish with:

One tiny drizzle of Seven Barrels Blueberry Balsamic

Chef's Tip

For the fluffiest pancakes, avoid overmixing the batter. A few small lumps are perfectly fine. Resting the batter for five minutes gives the baking powder time to activate, resulting in lighter, taller pancakes.
