Strawberry Balsamic Cheesecake Cookies

Thick, bakery-style cookies packed with white chocolate, strawberries, and a creamy cheesecake center, then finished with a glossy strawberry balsamic drizzle. These oversized cookies are rich, soft, slightly tangy, and designed to feel like they came straight from a specialty cookie shop.

Ingredients

For the Cheesecake Filling

  • 6 ounces cream cheese, softened
  • 3 tablespoons powdered sugar
  • 1/2 teaspoon vanilla extract

For the Strawberry Balsamic Drizzle

  • 1 cup unsalted butter, softened
  • 3/4 cup packed light brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 tablespoon cornstarch
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 3/4 teaspoon kosher salt
  • 1 cup white chocolate chips or chopped white chocolate
  • 3/4 cup freeze-dried strawberries, lightly crushed
  • 1/2 cup crushed shortbread cookies or graham crackers
  • Flaky sea salt, optional

Instructions

Prepare the Cheesecake Filling

Line a small plate or baking sheet with parchment paper.

In a small bowl, beat the softened cream cheese, powdered sugar, and vanilla until smooth.

Scoop the mixture into 10 small portions, about 2 teaspoons each, and place them on the prepared plate. Freeze for at least 30 minutes, or until firm enough to handle.

Make the Strawberry Balsamic Drizzle

Add the Strawberry Dark Balsamic Vinegar, brown sugar, and salt to a small saucepan.

Bring to a gentle simmer over medium-low heat. Cook for 6 to 8 minutes, stirring occasionally, until the mixture has thickened slightly and coats the back of a spoon.

Remove from the heat and allow it to cool completely. The drizzle will continue to thicken as it cools.

Do not reduce it until it becomes sticky or candy-like. It should remain loose enough to drizzle over the cookies.

Prepare the Cookie Dough

In a large mixing bowl, beat the butter, brown sugar, and granulated sugar for 2 to 3 minutes, until light and creamy.

Add the eggs one at a time, mixing well after each addition. Mix in the vanilla.

In a separate bowl, whisk together the flour, cornstarch, baking soda, baking powder, and salt.

Gradually add the dry ingredients to the butter mixture. Mix just until a thick dough forms.

Fold in the white chocolate and freeze-dried strawberries. Avoid overmixing once the strawberries are added, or the dough may turn completely pink.

Cover the dough and refrigerate for 30 to 45 minutes.

Fill and Shape the Cookies

Preheat the oven to 375°F. Line two large baking sheets with parchment paper.

Divide the chilled dough into 10 large portions.

Flatten one portion of dough into a thick disk. Place one frozen cheesecake filling portion in the center. Fold the dough around the filling and seal it completely.

Shape the dough into a tall ball rather than a flat disk. This helps create a thicker bakery-style cookie.

Repeat with the remaining dough and filling.

Press the tops of the cookies into the crushed shortbread cookies or graham crackers. Add a few extra pieces of white chocolate and freeze-dried strawberry to the tops, if desired.

Place no more than five cookies on each baking sheet, leaving plenty of room between them.

Bake

Bake for 14 to 16 minutes, or until the edges are set and lightly golden but the centers still appear slightly soft.

Allow the cookies to cool on the baking sheet for at least 15 minutes. The centers will continue to set as they cool.

Finish the Cookies

Drizzle the cooled cookies with the Strawberry Balsamic reduction.

Finish with a small pinch of flaky sea salt, if desired.

For the most dramatic presentation, add a few crushed freeze-dried strawberries and shortbread crumbs over the drizzle before serving.

Baker’s Notes

These cookies are intentionally large. Smaller cookies may not have enough dough to fully surround the cheesecake filling.

Freezing the cheesecake filling is important. Soft filling can leak through the cookie dough while baking.

Freeze-dried strawberries work better than fresh strawberries in the dough because they add concentrated flavor without introducing excess moisture.

The balsamic drizzle should be added after the cookies have cooled. Adding it while they are hot may cause it to soak into the surface rather than remain visible.

Store the finished cookies in an airtight container in the refrigerator for up to four days because of the cheesecake filling. Bring them to room temperature before serving, or warm them for about 10 seconds in the microwave.

Serving Suggestion

Serve these cookies slightly warm with cold milk, coffee, or vanilla ice cream. For a plated dessert, place one cookie beside a scoop of cheesecake or strawberry ice cream and add an extra drizzle of Strawberry Dark Balsamic Vinegar.
