Ingredients
- 4 ears fresh corn, husks removed
- 3 tablespoons Seven Barrels Garlic Infused Olive Oil
- 2 tablespoons honey
- 1 tablespoon soy sauce
- 1 tablespoon Seven Barrels Traditional Balsamic Vinegar
- 1 teaspoon smoked paprika
- ½ teaspoon chili powder
- ½ teaspoon garlic powder
- Salt and black pepper, to taste
- 2 tablespoons grated Parmesan cheese
- 2 tablespoons chopped fresh parsley or cilantro
- Optional: crushed red pepper, lime wedges, or sliced green onions
Instructions
- Heat the oven to 425°F. Line a baking sheet with parchment paper. An air fryer can also be used at 400°F.
- Carefully cut each ear of corn in half crosswise. Stand each piece upright on a sturdy cutting board and slice it lengthwise through the cob. Cut each half again to create four curved “ribs” from each ear.
- In a small bowl, whisk together the Seven Barrels Garlic Infused Olive Oil, honey, soy sauce, Traditional Balsamic Vinegar, smoked paprika, chili powder, garlic powder, salt, and pepper.
- Place the corn ribs on the prepared baking sheet. Brush them generously with about two-thirds of the garlic glaze, making sure the kernels are well coated.
- Roast for 20 to 25 minutes, turning once, until the corn is tender, caramelized, and beginning to curl. For deeper browning, broil for the final one to two minutes while watching closely.
- Warm the remaining glaze in a small saucepan for one to two minutes, or microwave it briefly until slightly thickened.
- Brush the hot corn ribs with the remaining sticky glaze. Finish with Parmesan, parsley or cilantro, and crushed red pepper. Serve with lime wedges.
Air-fryer method
Cook the coated corn ribs at 400°F for 12 to 15 minutes, turning halfway through. Work in batches so the ribs are not crowded.
Best Seven Barrels variation
For a sweeter, fruitier version, replace the Traditional Balsamic with Seven Barrels Peach Balsamic. The peach, garlic, honey, and smoky paprika combination would be especially good for summer content.
