Witch's Brew Mushroom & Wild Rice Cauldron Soup
When the evenings grow colder and Halloween approaches, nothing feels more fitting than a simmering pot of rich mushroom soup. This Witch's Brew Mushroom & Wild Rice Cauldron Soup is inspired by old-world kitchens where cast iron pots bubbled away over open fires, filling the room with earthy aromas and comforting flavors.
Roasted mushrooms create incredible depth while wild rice adds hearty texture. Seven Barrels Garlic Olive Oil provides a fragrant foundation, and a splash of Bourbon Balsamic Vinegar at the end ties everything together with just enough sweetness and complexity to make every bite memorable.
Whether you're serving this for Halloween dinner, a fall gathering with friends, or simply looking for a comforting weekend meal, this soup is guaranteed to become an autumn favorite.
Ingredients
For the Soup
- 2 tablespoons Seven Barrels Garlic Olive Oil
- 1 large yellow onion, diced
- 2 shallots, minced
- 5 cloves garlic, minced
- 12 ounces cremini mushrooms, sliced
- 12 ounces baby bella mushrooms, quartered
- 8 ounces shiitake mushrooms, stems removed and sliced
- 2 teaspoons fresh thyme leaves
- 1 teaspoon chopped rosemary
- 1 teaspoon rubbed sage
- 1 cup wild rice blend, rinsed
- 7 cups vegetable stock (or beef stock for a richer flavor)
- 1 Parmesan rind (optional)
- 2 tablespoons Seven Barrels Bourbon Balsamic Vinegar
- ½ cup heavy cream (optional)
- Salt and freshly cracked black pepper
- Fresh parsley for garnish
Optional Garnishes
- Roasted mushroom caps
- Fresh thyme sprigs
- Swirl of cream
- Fresh cracked pepper
- Garlic croutons
- Crispy fried shallots
Directions
Step 1
Heat the Seven Barrels Garlic Olive Oil in a large Dutch oven or heavy soup pot over medium heat. Add the onion and shallots and cook for about 8 minutes until soft and lightly caramelized. Stir in the garlic and cook for another minute.
Step 2
Add all of the mushrooms. Increase the heat slightly and cook until they release their moisture and become deeply browned, about 12 to 15 minutes. This step develops the rich, earthy flavor that makes this soup special.
Step 3
Stir in the thyme, rosemary, sage, and wild rice. Cook for two minutes, allowing the herbs to become fragrant.
Step 4
Pour in the stock and add the Parmesan rind if using. Bring to a gentle boil, then reduce to a simmer. Cover partially and cook for 45 to 50 minutes, or until the wild rice is tender.
Step 5
Remove the Parmesan rind.
Stir in the Seven Barrels Bourbon Balsamic Vinegar and season with salt and black pepper to taste.
Step 6 (Optional)
For an extra luxurious soup, stir in the heavy cream during the final five minutes of cooking.

Chef's Tip
Don't rush the mushrooms. Allowing them to brown deeply before adding the stock develops the rich umami flavor that gives this soup its signature "witch's brew" appearance.
Finish every bowl with a final drizzle of Seven Barrels Garlic Olive Oil and just a few drops of Bourbon Balsamic Vinegar. The fresh olive oil brightens the earthy mushrooms while the balsamic adds a subtle smoky sweetness that makes the flavors truly unforgettable.
