Marinated Feta

Featuring: Miller's Blend Extra Virgin Olive Oil

Ingredients:

  • 1 block feta cheese (7–8 oz)
  • 1/3 cup Seven Barrels Estate Olive Oil
  • 1 clove garlic, thinly sliced
  • 1 teaspoon lemon zest
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon fresh oregano leaves
  • 1/2 teaspoon crushed red pepper flakes
  • Fresh cracked black pepper
  • 1 tablespoon chopped fresh parsley (optional)
  • 1 teaspoon honey (optional for a touch of sweetness)

Instructions:

Place the block of feta in a shallow bowl or small serving dish.

In a small bowl, combine the Seven Barrels Miller's Blend Extra Virgin Olive Oil, garlic slices, lemon zest, lemon juice, thyme, oregano, crushed red pepper flakes, and black pepper. Stir gently to combine.

Pour the olive oil mixture over the feta so the cheese is mostly covered.

Cover and refrigerate for at least 1 hour so the flavors begin to develop. For a deeper flavor, allow the feta to marinate for 4 to 24 hours.

Remove from the refrigerator about 20 minutes before serving so the olive oil returns to a liquid consistency.

Sprinkle fresh parsley over the top before serving.

Serve with warm bread, toasted baguette slices, crackers, or fresh vegetables.

The leftover olive oil marinade can be used as a finishing oil for roasted vegetables, pasta, or grilled chicken.
