Sicilian Chicken with Feta & Dill Vegetables

Ingredients

  • Chicken breasts
  • Green beans
  • Yellow squash
  • Fresh dill
  • Garlic
  • Feta cheese
  • Salt and pepper

Seven Barrels Products:

Before You Cook

  • Wash and dry all produce
  • Trim green beans
  • Slice squash into thin half-moons
  • Mince dill and garlic
  • Allow chicken to come to room temperature

Step 1: Cook the Chicken

Pat chicken dry and season with salt and pepper.

Heat a pan over medium heat and add:
1 tsp Seven Barrels Tuscan Herb Olive Oil

Add chicken and cook until golden brown and cooked through, about 5–7 minutes per side (internal temp 165°F).

Remove from heat and let rest.

Step 2: Prepare the Vegetables

In the same pan, add:

Add green beans and cook for 1 minute.

Add 1/4 cup water, cover, and cook until beans are tender, about 6–8 minutes.

Uncover and add:

  • Salt and pepper

Cook until lightly browned and tender, about 3–4 minutes.

Step 3: Finish the Dish

Slice the chicken if desired and plate alongside the vegetables.

Top with:

  • Crumbled feta
  • Fresh dill
